I have always believed that less is more in the kitchen. Sometimes, we strive to give shape to new and very creative recipes, but sometimes the best is the simplest and the oldest recipes are the ones that give us much more flavor. An example of this is this simple garnish of roasted broccoli with lemon and parmesan that surely repeated at home frequently.
Broccoli may not be one of our favorite vegetables, but lemon gives it a very fresh flavor that highlights enough Parmesan cheese to surprise our palate. It is a very simple recipe, delicious to accompany any meal, and that we will have ready in just 20 minutes.
Ingredients for 4 people
- Florets of whole broccoli,
- 2 tablespoons of olive oil,
- 2 cloves of garlic,
- 1/2 cup of Parmesan cheese,
- 3 lemons, salt, and pepper.
How to make roasted broccoli with lemon and parmesan
To prepare this recipe, we will need to preheat the oven to 220ºC and prepare an oven tray by spraying it with cooking spray.
In a large bowl combine broccoli florets with olive oil, salt, pepper, crushed garlic, lemon juice and half of Parmesan cheese, ensuring that all ingredients are well mixed to achieve a better flavor.
Next, arrange the florets of broccoli on the baking sheet, making sure they do not overlap and place the two remaining lemons cut into segments around, and take to the oven for 15 minutes until the broccoli is tender.
Finally, we remove from the oven, sprinkle the rest of the Parmesan cheese and if we want to squeeze the lemon wedges on the broccoli or, we leave it to the taste of the diner.
Tasting
To serve this roasted broccoli with lemon and parmesan I prefer to leave that extra touch of lemon to the diner’s taste, so I limit myself to placing one or two of the segments of this citrus on the plates. It is perfect to accompany white meats cooked on the grill or baked.
