To begin with, we must know that there are many types of cooked eggs. The yolk point depends on both the size of the egg and the cooking time, so the techniques vary within the result we are looking for.
The great classics and perhaps those that most doubt us. What is the exact time to cook hard-boiled eggs?
To start, put a saucepan on the fire with plenty of water and when it begins to boil (since if it would not take long to reach the boiling point), add a generous pinch of salt.
Let it cook 10 minutes to get a cooked egg on the dot. It is very common to exceed 10 minutes, even reaching 15, to make sure it is well cooked, but this is a mistake. The egg will be fully cooked, however, the yolk will no longer be juicy to dry more than it should.
In this case, we propose two ways to prepare poached eggs. Be careful, because the cooking time varies in both techniques.
Try in any case that the egg is not too cold since the contrast with the boiling water can cause the shell to break.
- Poached eggs with plastic wrap:
The most widespread way to make poached eggs is to put the egg in plastic wrap to cook it. We recommend that you cover a small bowl or a narrow glass with the paper and crack the egg on top. This will make it much easier to collect it. Make sure you tie the knot well so it doesn’t slip!
Cook the paper-wrapped eggs in boiling water for 5 minutes. After that time, remove and transfer them directly to a bowl of ice water. In this way, we break the cooking and prevent it from continuing to cook with its own heat. Once cold, all you have to do is remove the plastic wrap and that’s it!
- Poached eggs without using plastic wrap:
If you prefer to avoid using plastic wrap in the kitchen, we bring you another alternative to poach the eggs.
Prepare a casserole with plenty of water and heat to the boiling point. Add a pinch of salt and vinegar to the water so that the white maintains the white color and prevents it from detaching from the yolk.
Carefully crack the egg over the water so that the yolk does not break. Let cook for 2 minutes. The eggs will stay on top of the water, so you can gently push the hot water towards the top of the egg.
After 2 minutes, remove from the water being very careful not to break them. As it is such a short cook, the result is very delicate since they are not completely solid. Keep in mind that with the own heat they maintain when taking them out of the water, they will continue to cook a few more minutes, so the final result will be somewhat more solid.
Mollet eggs are one of the most complicated cooked eggs, but at the same time more irresistible. In this case, controlling the time is very important to ensure that the white is curdled, while the yolk remains liquid.
In the case of common chicken eggs, we reduce the cooking time to 6 minutes. If they are chicken but smaller, we recommend that you reduce the time to 4 minutes. So it is about playing with the cooking intervals of between 4 and 6 minutes.
It is important to calculate the time well, and as the exact minute’s pass, carefully remove them from the water and transfer them to a bowl with water and ice to cut the cooking. This way we avoid that the yolk curdles with the own heat that maintains the egg after cooking.
